About the Project: Refuge provided the unique challenge of working with an incredibly small space comparative to the number of meals produced at its location. Due to space constraints, the menu was limited, which was further complicated by the necessary space allocations to ensure health department regulations for warewashing, refrigerated storage, sinks and exhaust hoods, and more. There was also limited storage, which created unique operational challenges. The operational flow was designed to accommodate nearly 100% of the daily production delivered each morning, which was then immediately prepared and prepped for each day’s service. JME developed an operational flow that ensured no cross-traffic for clean and dirty dishes. In the end, JME designed this restaurant to operate at maximum efficiency, which produces the highest revenue per square foot of any project JME has previously designed.
